Baobab Truffles

Ingredients:

17 ounces Medjool dates,pitted

7 ounces unsalted almonds

4 Tbsp coconut oil

4 Tbsp raw cacao powder

2 Tbsp almond butter

5 Tbsp baobab powder

         (Baobab powder is high in vitamin C and other nutrients to help with alertness, energy and immune function.)

In a food processor, combine all ingredients except the baobab powder.  Blend until mixture sticks together but nuts are still in chunks.

Place the baobab powder in a bowl.

Scoop 1 Tbsp of truffle mix and roll it into a ball, then roll the ball in the baobab powder until coated and no longer sticky.  Repeat until all mixture is rolled into balls.  Place in the fridge for a few hours to set.
